WHere is a simplified interpretation of a drink from a new cocktail list. It's a batch prepared mix that's loaded with the tastes of a festive period, rendering it perfect for a festive gathering. Save the extra cordial to use in brunch beverages, desserts, or to make additional servings of bikinis.
The Bikini Cocktail
Makes enough for 10 servings
To make the Clementine Cordial (yields 750ml)
300ml fresh clementine juice
200ml fresh lemon juice
500g granulated sugar
Ingredients for the Premix (yields 850ml, serving 10)
400ml decent vodka
100ml classic gin
150ml peach liqueur
200ml citrus syrup (see above)
Fresh cranberries, for garnish
Mandarin essential oil, for finishing
Method
For the Cordial: Put the listed items in a pot, bring to a light boil, stirring until the sugar dissolves. After that, remove from the stove and let it to cool completely. Transfer to a clean bottle, seal and refrigerate it in the refrigerator, it can be stored for around four weeks.
For the Premix: Pour all the liquids into a large bottle, allow it to infuse for one hour, then filter it preferably using a fine cloth, to ensure it's perfectly clear.
For serving: Measure 85ml of your premix to a mixing glass filled with ice, and agitate carefully for one minute to cool it down. Strain into an cold coupe glass or equivalent, garnish with the cranberries and finish with a quick spritz of mandarin oil over the drink.
